Still from Taste of Home’s: Busy Family recipes.  I will break down the cost first.  This recipe originally served 7, but I still doubled it thinking it would make a quick dinner for the next night for some.  I spent $19 dollars on ingredients-so about $1.36 per serving.  Pretty reasonable.

I am not sure if it was D being so fussy, as two year olds are prone to be when they are hungry, or I was just out of sorts, but this seemed to take me forever!  Looking back, it is a fairly easy recipe- boil up the bowtie pasta, brown the ground beef with the onions and just add the other ingredients in the pan.  When the pasta is done, drain it and add that to the pan as well.  Stir, put everything in an oven safe dish, and bake for about 30 minutes.  Simple, and pretty tasty.

I liked it!  I am a big fan of tacos, and I love pasta as well, so the flavors worked well for me with this.  Add a side of corn bread… good meal on a cold night.

R liked it, but wasn’t impressed with the crushed tortilla chips on top of the casserole.  Truth be told, they did get either a bit soggy or too crunchy.  With corn bread they aren’t needed.

C dug it…but then he seems to like anything and everything!

J said it was good, but I don’t think he liked this as much as the Beef Ragu.

A didn’t seem to like it.  Said it was too spicy, though that could be controlled depending on what type of salsa you put in the mix.  I used medium.  He did, however, like the cornbread.

H liked the pasta and the corn bread, but seemed uninterested in anything else.

D liked the corn bread as well, and he ate a few of the noodles.

Overall, this was a quick and easy recipe.  I think I was just scattered last night so it took me a bit longer than usual to get into everything and get it on the table.
